There are two cupcakes that people ask me about pretty often -- red velvet and carrot cake. So, I decided that it's time to start making them. I started with carrot cake because a good friend offered up a fabulous carrot cake recipe that has been in her family for a very long time (thanks again, J!). I was so excited to try this recipe especially since it has remained a favorite in her family throughout the years. I followed the recipe to a T and they came out wonderful -- full of flavor and perfectly moist. Because the recipe made over three dozen cupcakes, I had to get them out of the house quickly before I devoured all of them. I sent them to my neighbor, who is a "carrot cake guy." He loved them too and scarfed down three that night.
Although this recipe is perfect as it is, I feel a bit guilty using a recipe that I haven't made "my own." I will probably do some experimenting, using this as my base, and come up with something a little different.
